CALZONES 
DOUGH:

2 tsp. yeast
1 tbsp. honey
1 1/4 c. warm water
2 c. whole wheat flour
2 c. white flour
1/2 tsp. salt

FILLING:

1 (10 oz.) pkg. frozen spinach, thawed & squeezed to remove excess liquid
1/2 c. cottage cheese
1/2 c. ricotta cheese
2 cloves garlic, crushed
8 oz. mozzarella cheese, grated

Dough: Dissolve yeast and honey in water. Stir in flours and salt. Knead dough on floured board until elastic, 10-15 minutes. Cover and set in a warm place to rise until doubled in bowl, about 1 hour. After dough has doubled, punch it down. Divide into 8 sections and roll each out into rounds, 1/4 inch thick.

Filling: Prepare while dough is rising. Combine thawed and squeezed spinach with the cheeses and garlic; mix well. Fill each dough round with 1/2 cup filling on half of circle, leaving 1/2 inch rim. Moisten rim with water, fold empty side over and press edge with fork to seal. Repeat with remaining rounds. Bake on lightly oiled baking sheet for 15-20 minutes or until lightly browned. Serve with marinara sauce.
