BAGELS 
3 1/4-3 1/2 c. flour
3 tbsp. sugar
2 pkg. dry yeast
1/2 tsp. salt
1 c. warm water (120-130 degrees)
Vegetable cooking spray
3 1/2 qt. water
1 tbsp. sugar
1 tsp. salt
1 egg white
1 tbsp. water

Combine 1 1/2 cups flour, 3 tablespoons sugar, yeast and 1/2 teaspoon salt in large bowl; stir well. Add warm water and beat 2 minutes on medium speed wit h mixer. Gradually stir in enough of the remaining 2 cups flour to make a stiff dough. Sprinkle small amount flour on work surface and knead dough until smooth and elastic (8-10 minutes).

Place dough in a large bowl coated with a cooking spray. Cover and let rise in warm place for 1 hour or until doubled in bulk.

Punch down dough and let rest for 15 minutes. Divide dough into 15 equal portions. Shape each portion into a ball. Punch a hole through each ball using a floured finger.

Bring 3 1/2 quarts water, 1 tablespoon sugar and 1 teaspoon salt to boil in large kettle. Reduce heat. Drop bagels a few at a time into boiling water. Simmer 1 minute on each side. Drain on paper towels. Place bagels on cookie sheets which have been sprayed with cooking spray.

Beat egg white and 1 tablespoon water. Brush over bagels. Bake one sheet at a time at 375 degrees for 35 minutes or until golden. 106 calories each. 0.3 gms fat. 0 cholesterol.
