BUTTERMILK PANCAKES 
2 eggs
2 1/2 c. buttermilk
1 1/2 c. flour
1 c. cornmeal
1 tsp. baking powder
1 tsp. baking soda
2 tsp. sugar
1/2 tsp. salt
2 tbsp. melted fat

Beat eggs. Add buttermilk. Sift together dry ingredients and stir them and the melted fat into buttermilk mixture. Stir just until blended. Bake until lightly browned on hot, ungreased well-seasoned griddle, turning once.
