OUTDOOR BAKED FISH | |
Heavy Duty Aluminum Foil 1 1/2 lb. fish Oil or melted butter 1 lemon, sliced Salt & pepper to taste 1-2 tomatoes, chopped 1 jar pimento Juice of 1 lemon Scale and clean fish, leaving whole or cut into fillets or steaks. Place fish in individual sheets of foil. Brush with oil or melted butter. Sprinkle with salt, pepper and lemon juice. Top each fish with 1 teaspoon chopped tomato and pimento. Garnish with lemon slices. Bring foil up over fish. Seal with double fold. Seal ends. Place on grate over medium hot fire. Bake 10 minutes on a side for 1 1/2 pound fish. 15 minutes each side for a 2-3 pound fish and 20 minutes each side for 4-5 pound fish. Open foil and test with a fork. Fish is done when it flakes. Also can serve juice that forms in package. Makes 4-8 servings depending on fish size. |
