BARBECUE BRISKET 
6-7 lb. brisket
Liquid Smoke
Salt
Chopped onion
Garlic powder

SAUCE:

1 qt. catsup
3 tbsp. brown sugar
1/2 c. water
2 tbsp. Liquid Smoke
4 tbsp. Worcestershire sauce
2 tsp. celery seed
3 tsp. dry mustard

1. Rub 1 tablespoon liquid smoke and 1 tablespoon salt on each side of brisket. Wrap in foil and refrigerate overnight.

2. Sprinkle chopped onion (1 large) and 1 tablespoon of garlic powder on each side. Wrap in foil seams up. Bake in large pan at 300 degrees until tender, about 4 1/2 to 5 hours.

3. Refrigerate. When cool, drain juice. Remove fat and slice (if making ahead freeze at this point).

4. Combine all ingredients for sauce together and cook until blended.

5. Pour sauce over meat. Cover with foil. Bake at 350 degrees for 30 minutes. Serves 6-8 people.
