CHERRY JELLY ROLL 
4 eggs
1/4 tsp. salt
1 c. sugar
1 c. flour
2 tsp. baking powder
1 tsp. vanilla
1/4 c. hot milk

Beat the eggs and salt until light. Continue to beat while adding the sugar. Sift together and add the flour and baking powder. Then add the vanilla and hot milk. Pour into a jelly roll pan lined with waxed paper and bake in 400 degree oven for 15 minutes. When done, turn out on a powdered sugar covered towel. Roll into jelly roll shape and let cool.

FILLING:

16 oz. can tart cherries
1 tbsp. cornstarch
1/2 c. sugar

Pour juice from cherries into saucepan. Add cornstarch and sugar and heat, stirring often, until thick. Add cherries. Remove towel from cake and spread 1/2 cherry mixture inside roll. Put rest on top.

Currant jelly can be spread on jelly roll instead of cherries and rolled up.
