SHRIMP ETOUFFEE 
1 lb. shrimp (raw & peeled)
1 1/2 c. onions, chopped
2 tbsp. celery, chopped
3 tbsp. bell pepper, chopped
1 tbsp. Parmesan cheese
3 cloves garlic, minced
1 can tomato sauce
Salt and pepper to taste
Oil

Wilt onions in oil. Add all other ingredients, except shrimp, and cook for 1 hour over low heat. Add shrimp about 20 minutes before cooking time is completed. Serve over rice.
