SHRIMP CASSEROLE 
1 box yellow saffron rice
1 lb. shrimp, thawed
1 bell pepper, chopped
1 onion, chopped
1 can cream of mushroom soup
1 can Rotel tomatoes
8 oz. Cheddar cheese, grated

Cook yellow rice as you would regular rice. Saute onions and bell pepper in butter. When half sauteed, add shrimp. Cook for approximately 5 more minutes. Mix together cooked rice, shrimp, bell pepper, onions, soup, and Rotel tomatoes. Mix very well together. Spread in large baking dish. Bake at 350 degrees for 15 minutes. Top with grated cheese and bake until cheese melts.
