CHICKEN MARSALA 
4 chicken breasts
2 eggs
2 tbsp. marsala wine
1/2 c. bread crumbs
1/4 lb. butter
1/2 c. Parmesan cheese
2 tbsp. melted butter
1/2 c. chicken stock
2 tbsp. marsala wine
Mushrooms

Cut up chicken, bite size, beat eggs and wine and leave in chicken for 1 hour in refrigerator.

Roll pieces in crumbs and brown in 1/4 pound butter 5 minutes each side. Put chicken in buttered casserole and sprinkle with cheese.

Use 2 cup measuring cup for stock mix in 2 tablespoon wine and mushrooms. Pour over chicken along with melted butter and more cheese. Bake at 350 degrees for 20 to 30 minutes.
