BAKED SPINACH 
2 pkgs. (10 oz.) frozen spinach, thawed
2 tbsp. butter
1 c. chopped onion
2 c. garlic, minced
1 tbsp. all-purpose flour
3/4 c. whipping cream
3/4 c. Parmesan cheese
Dash of paprika
1/2 tsp. dried oregano leaves

Place spinach in colander. Press out excess liquid. Set aside. Heat butter in skillet. Add onion and garlic. Saute over medium heat until onion is translucent. To the skillet, add flour. Stir until well blended. Stir in cream. Remove from heat. Add spinach and 1/2 cup cheese. Blend thoroughly. Add paprika and oregano. Turn mixture into 1 quart shallow baking dish. Sprinkle with remaining cheese. Bake at 325 degrees for 10 to 15 minutes until heated through.
