MICROWAVE LASAGNE | |
1 qt. tomato sauce with meat 1 (8 oz.) pkg. lasagna noodles 1/4 c. water 16 oz. Ricotta cheese 1 egg 1/4 c. parsley, minced 8 oz. Mozzarella cheese, grated Grated Parmesan cheese 1/2 qt. tomato sauce with meat Evenly pour about 1/3 quart of tomato sauce into a 7 x 11 inch shallow baking dish. Arrange 1/3 of the noodles in a single layer in the dish. Add the water to the remainder of the quart of sauce and stir well. In a separate bowl, combine Ricotta, egg and parsley; mix well. Place 1/2 of the Ricotta mixture on the noodles in the baking dish. Sprinkle with 1/3 of the grated Mozzarella. Top with 1/2 the remaining noodles and cover with about 1 1/3 cups tomato sauce. Repeat the layering again, using the remaining Ricotta mixture, some of the Mozzarella, the remaining noodles and approximately 1 1/2 cups sauce. The reserved Mozzarella will be used for the topping. Cover dish with plastic wrap or glass lid and cook at 50% power or medium for 20 minutes, turning dish a quarter turn after 10 minutes. Let stand, covered, for 5 minutes. Turn dish a quarter turn again and cook, covered, at 50% power for 18 minutes, turning dish a quarter turn about halfway during the cooking. Remove cover and add remaining Mozzarella and some of the grated Parmesan. Cook, uncovered, for 2 to 5 minutes on high or until cheese melts. Remove, holding wrap above cheese with toothpicks. Let stand for 15 minutes. Place remaining 1/2 quart of sauce in a microwave-safe gravy boat or service bowl and cook on high, covered with waxed paper, for 3 to 5 minutes or until hot. Serve sauce with lasagna and extra grated Parmesan cheese. Serves 4 to 6. Approximate cost: $7.00 A standing time midway and at the completion of cooking will also bring about tender results. The final standing time also will allow for easy cutting of the casserole and will ensure that each piece will keep its shape. When cooking lasagne in this manner, serve each piece with additional hot tomato sauce, since the microwave method can produce a drier casserole than the conventional oven. But with this new way, you'll agree that lasagna has never been easier to make. |
