YAMS THAT AM 
12 c. grated sweet potatoes
2 c. evaporated milk
1 stick butter
2 c. sugar
1/2 tsp. cinnamon
1/2 tsp. nutmeg
3 tsp. ginger

Beat until fluffy butter and sugar, then add other ingredients and mix together. Fold into baking dish and layer the top with 1 cup of brown sugar and sprinkle with nuts or coconut. Bake for 1 hour at 350 degrees.
