RED VELVET CAKE 
1 1/2 c. sugar
2 1/2 c. all-purpose flour
1 c. buttermilk
1 tsp. baking soda
1 oz. bottle red food coloring
2 eggs
1 1/2 c. Crisco oil
1 tsp. vanilla
1 tsp. vinegar

Mix dry ingredients together. Mix the liquid ingredients together, then blend together. Bake 25 minutes at 350 degrees.

CAKE FILLING:

1 box powdered confectioners' sugar
1 (8 oz.) pkg. cream cheese
1 stick butter

Let cheese and butter melt, then add sugar and chopped pecans and beat until fluffy and cream. After cake is cool, then ice as you normally would.
