PASTA PRIMAVERA WITH CHICKEN | |
This recipe is also delicious without the chicken breast. 3/4 lb. boned & skinned chicken breast 1/2 lb. mushrooms 1 med. green or yellow bell pepper 6 to 8 onions 1/2 lb. linguine or fettuccine 1/4 c. + 1 tbsp. good quality olive oil 2 garlic cloves, minced 1/4 c. chopped fresh fill or 1 tsp. dried 3/4 tsp. or less or No Salt or Mrs. Dash 1 sm. zucchini, cut into quarters & sliced Fill a large pot of water for the pasta and put on the fire to boil. Add about 1 teaspoon of olive oil and about the same of No Salt. Cut the chicken in cubes if using slice the mushrooms in thick slices, cut the bell peppers in very thin strips, and coarsely chop the onions, slice the squash. Heat 2 tablespoons of oil in a large skillet over medium high heat. Add the chicken and saute until the chicken turns white, about 2 to 3 more minutes. Season with Mrs. Dash Original Flavor while the vegetables are cooking. Cook the pasta to al dente, drain and add to the vegetables. If you wish, oil a deep bowl, add all to the bowl and toss. Add the dill and freshly ground black pepper. Serve with freshly grated Parmesan cheese. Serves 4. This is a health conscious recipe. |
