CHEESE PUFFS 
1/4 lb. American cheese
1/4 lb. Cheddar cheese
1/4 tsp. baking powder
2 eggs, separated
Round of white bread
Butter to spread

Use thinly sliced bread and cut into rounds. Toast on one side. Spread other side with butter. Grate cheese, add baking powder. Mix with beaten yolk of egg. Fold in stiffly beaten egg whites. Pile heavily on toasted side (slightly higher in center). Put close together in baking pan - place under broiler until they are puffed and light brown. Serve hot.
