NATURALLY SWEET OATMEAL-FRUIT
COOKIES
 
1 c. sifted flour
1 tsp. baking soda
1 c. water
1/2 c. chopped pitted dates
1/2 c. chopped, peeled apple
1/2 c. raisins
1/2 c. regular butter
1 c. quick cooking oats
2 eggs, beaten
1 tsp. vanilla
3/4 c. chopped nuts

Sift together flour and baking soda; set aside.

In saucepan over medium-high heat, bring water, dates, apple and raisins to a boil. Reduce heat to low; simmer 3 minutes. Remove from heat. Add butter and stir until melted. Pour into large bowl, cool slightly. Stir in dry ingredients, oats, beaten eggs, vanilla and chopped nuts until well blended. Cover and refrigerate overnight.

Drop by heaping teaspoonfuls 2" apart on greased baking sheets. Bake in 350 degree oven for 12 to 14 minutes. Remove from baking sheets, cool on racks. Store in refrigerator in air tight container. Makes 40 cookies.
