AUNT JEAN'S CANNED ZUCCHINI
RELISH
 
4 c. chopped onion
10 c. chopped zucchini
1 red pepper
1 green pepper
3 c. sugar
2 1/2 c. cider vinegar
2 1/2 tbsp. celery seed
1 tbsp. turmeric
2 1/2 tbsp. cornstarch
1 tbsp. nutmeg
1 tbsp. mustard seed
1/2 tsp. black pepper

Grind first 4 ingredients. Sprinkle with 5 tablespoons salt and let stand for 8 hours, then cover with cold water. Drain. Mix remaining ingredients and add to zucchini mixture, cook to a boil. Simmer 1/2 hour, stirring often. Pack in hot sterilized jars. Good luck!
