JEANNE'S EASY LOW-FAT CHILI CON
CARNE
 
This is an old family recipe that has been de-fatted for today's healthier tastes.

1 1/2 lb. lean ground turkey
1 large onion, chopped
2 cloves garlic, minced
1 large bell pepper, chopped
3 (14 oz. ea.) cans diced tomatoes
2 (16 oz. ea.) cans black beans
1 tbsp. chili powder
2 tsp. salt
Tabasco sauce or cayenne pepper (optional)

In large Dutch oven, brown turkey and drain off any fat. Return meat to the pot and add rest of ingredients. Stir well, heat to bubbling. Reduce heat to simmer and cook, covered, for 2 hours, stirring occasionally.
