APPLE - RAISIN COFFEE CAKE 
3/4 c. sugar
1 egg
1 1/2 c. sifted flour
1/2 tsp. salt
Sliced apples
1/4 c. soft butter
1/2 c. milk
2 tsp. baking powder
1/2 c. seedless raisins

Heat oven to 350 degrees. Mix sugar, shortening, egg together thoroughly. Stir in milk. Sit together and stir in dry ingredients. Add raisins. Spread batter in greased 9x9-inch pan.

Arrange apple slices on top of batter, pressing them in slightly. Sprinkle top with 1 teaspoon sugar mixed with 2 tablespoons cinnamon. Bake 20-25 minutes until toothpick stuck in center comes out clean. Remove and cut into squares.
