APPLE PUDDING CAKE 
2 c. sugar
1/2 c. shortening
2 eggs
2 tsp. plain flour
2 tsp. baking soda
1 tsp. vanilla
1/2 c. English walnuts (pecans)
4 c. apples (pared, peeled and diced)

Mix shortening, eggs, sugar. Cream. Add flavoring. Add sifted flour, salt, soda. Stir in small amounts of apples and nuts. Bake in 7 x 12 or 9 x 13 inch pan. Bake at 300 degrees for about 1 hour or until cake breaks away from pan.

ICING FOR APPLE CAKE:

3/4 c. sugar
1 stick butter
1 tsp. Karo syrup (light)
1/4 c. buttermilk
1 tsp. vanilla
1/4 tsp. baking soda

Boil 5 minutes. Pour over cake while cake is hot. Icing will be sort of thick (caramelized). The longer the cake sets, the better it is.
