LEMON SUNSHINE CHEESE PIE 
1 sm. pkg. lemon pie filling mix
2 1/4 c. 7-Up, divided
2 eggs, separated
1 tbsp. lemon juice
1 tsp. lemon peel, grated
1 (3 oz.) pkg. cream cheese
3/4 c. sugar
1 (10") pie shell, I like graham cracker

Combine pie filling and 1/4 cup 7-Up in saucepan. Stir in egg yolks and add remaining 7-Up. Stirring constantly, cook over medium heat to full boil. Remove from heat. Pour ingredients from saucepan into large mixing bowl. Add lemon juice, lemon peel and cream cheese; beat until smooth. In separate bowl beat egg whites until soft peaks form. Gradually add sugar until stiff peaks form. Fold into lemon mixture. Pour into pie shell. Garnish with lemon slice.
