MINT CHIP TREAT 
8 graham crackers (1 c.)
3-4 tbsp. melted butter
2/3 c. butter
2 c. powdered sugar
3 eggs
3 sq. unsweetened chocolate
1 tsp. vanilla
1/4 tsp. salt
1/2 c. walnuts (optional)
1/2 gal. mint chocolate chip ice cream

Smash graham crackers in bottom of 8x12 pan. Mix with 3-4 tbsp. melted butter and bake at 350 degrees about 6-8 minutes.

Beat together rest of butter, powdered sugar and 3 egg yolks. Add chocolate, vanilla and salt. Stiffly beat 3 egg whites and fold into mix. Mix in nuts. Spread over crumbs and freeze overnight. Add ice cream on top and re-freeze.
