SWEET POTATO POUND CAKE 
1 c. butter
2 c. sugar
4 eggs
3 c. mashed sweet potatoes
3 c. flour
2 tsp. baking powder
1/2 tsp. salt
1 tsp. baking soda

Cream butter thoroughly. Add sugar gradually; beat well. Add eggs one at a time, beating after each addition. Combine dry ingredients and add to the creamed mixture alternately with the sweet potatoes. Line bottom of tube cake pan with waxed paper. Grease and flour pan and pour in batter. Bake at 350 degrees for one hour or until tests done. Leave in pan 5 minutes and remove. Delicious served with whipped cream.
