PEACH BREAD 
1 1/2 c. all purpose flour
3/4 tsp. salt
1/2 tsp. baking soda
1 c. sugar
2 eggs, well beaten
1/2 c. salad oil
1 1/4 c. fresh or drained canned peaches, coarsely chopped
1/2 tsp. vanilla
1/8 tsp. almond extract
1/2 c. almonds, chopped; optional

Combine flour, salt, soda, and sugar. Make a well in the center of dry ingredients. Add eggs and oil. Stir only until dry ingredients are moistened. Stir in peaches, vanilla, almond extract, and nuts. Spoon batter into one greased 9 inch loaf pan. Bake at 350 degrees for 1 hour or until it tests done.
