BOURBON BALLS | |
2 c. pecans 1 lb. vanilla wafers, rolled to crumbs (4 c.) 1 1/2 c. sifted confectioners' sugar 2 tbsp. cocoa 1/3 c. light corn syrup 3/4 c. bourbon 1/2 c. confectioners' sugar 1 tsp. instant coffee powder Combine pecans, vanilla wafer crumbs, 1 1/2 cups sugar, cocoa, corn syrup and bourbon. Shape mixture into 1" balls. Roll in the half cup of confectioners' sugar which has been mixed with the instant coffee powder. This makes about 6 dozen delicious bourbon balls which are very nice for any holiday. Store in covered container in the refrigerator until used. Do not use before 2 weeks after making so the balls can "season". |
