MICROWAVE PEANUT BRITTLE 
1 c. sugar
1/2 c. light corn syrup
1 c. salted peanuts
1 tsp. butter
1 tsp. vanilla
1 tsp. baking soda

In a 2 quart glass ceramic casserole, combine sugar and syrup; stir and cook at High 4 minutes. Add peanuts, stir well. Cook at High for 3 1/2 minutes; add vanilla and butter, stirring well. Cook on High 1 1/2 minutes. Add baking soda; stir until light and foamy. Immediately pour mixture onto buttered cookie sheet. Spread thinly. Cool; bread into small pieces.

Since microwave ovens vary in power, you may need to adjust your cooking time.
