SWEET POTATO PUDDING (A
THANKSGIVING FAVORITE)
 
1 lb. 7 oz. sweet potatoes
3 eggs
3/4 c. sugar
Dash of salt
4 tbsp. butter
Dash of cinnamon
1/3 c. wine, preferably white
1/2 c. milk
Marshmallows

Put sweet potatoes through sieve or mash them. Beat eggs lightly, add sugar, salt, melted butter, wine, cinnamon and milk. Place in greased casserole and bake in 325 degree oven for one hour. Melt marshmallows on top. Serves 4 to 6. I usually double for seconds or a larger group.
