CHEESY CHICKEN CASSEROLE 
8 chicken breast halves
1/2 c. flour
Salt and pepper to taste
1 tsp. tarragon
1/4 c. oil
1/4 c. butter
2 c. sour cream
1 heaping tsp. tarragon
3/4 lb. Cheddar cheese, grated
1 lb. broccoli, cut into bite-size pieces
2 c. cherry tomatoes
2 c. mushrooms, sliced

In a plastic bag, put flour, salt, pepper and tarragon. Add chicken breasts and shake until chicken is well coated. Brown chicken in melted butter and oil in a skillet until skin is crisp. Remove chicken and put it in a baking dish. Pour off all but 1/4 cup drippings. Add sour cream to drippings in skillet and mix well. Pour mixture over chicken. Sprinkle with tarragon and cover with cheese. Cook uncovered at 375 degrees for 3/4 hour. Add broccoli, cherry tomatoes, and mushrooms. Cover and cook 15 to 20 minutes longer. Serves 6 to 8.
