OVEN SWISS STEAK 
1 1/2 lb. beef round steak, cubed
1/2 c. flour
1 tsp. salt
1/4 tsp. pepper
1 (16 oz.) can stewed tomatoes
1/2 c. chopped celery
1/2 c. chopped carrots
2 tbsp. chopped onion
1 tsp. Worcestershire sauce
1/4 c. shredded sharp process American cheese (optional)

Cut meat into portions. Mix flour, salt and pepper. Rub into meat to coat well. Brown meat into small amount of hot shortening. Place meat into shallow baking dish.

Blend remaining flour with drippings in skillet. Add remaining ingredients, except cheese, stirring until boiling. Pour over meat. Cover and bake in 350 degree oven for 2 hours until tender. Top with cheese. Makes 4 servings.
