JEAN'S CHICKEN | |
1/2 chicken breast, boned & skinned 1 generous helping chicken flavored rice, cooked 2 (3 inch square) slices Swiss cheese 1 (or more) slice Canadian bacon (enough to cover 1 slice of cheese. Do not use ham) SAUCE: 3/4 tsp. butter, melted 1/4 tsp. white vermouth Slt to taste Pepper to taste Paprika to taste Combine all sauce ingredients, set aside. Refrigerate chicken (use directly from refrigerator so butter will set and not run off). On cookie sheet, in order given, put rice, 1 slice cheese, 1 layer Canadian bacon, 1 slice cheese and raw chicken breast. Baste breast with sauce. Preheat oven to 450 degrees. Broil 10 minutes. Baste with sauce again and bake at 450 degrees for 10 minutes. Serve at once with broccoli and pickled peach for quick supper. Serves 1. NOTE: May be prepared ahead, except for placing chicken on top, and put in refrigerator. Set out 1 hour before using to bring to room temperature. Place refrigerated chicken on top and proceed accordingly. |
