APPLE NUT PANCAKES 
1 c. pancake mix
1 tsp. cinnamon
1/8 tsp. nutmeg
1 c. milk
1 c. finely chopped apple
1/2 c. finely chopped nuts
1 egg
1 tbsp. vegetable oil

HONEY BUTTER:

1/2 c. honey
1/2 c. butter

Combine mix, cinnamon and nutmeg. Add milk, apple, nuts, egg and oil; stir until batter is fairly smooth.

Pour scant 1/4 cup batter onto hot (400 degree) lightly greased griddle. Turn pancakes when tops are covered with bubbles and edges look cooked. Turn only once.

HONEY BUTTER: Combine honey and butter in small saucepan. Heat until well blended and warm. For each serving, top pancakes with honey butter.
