SALMON MELTS 
1 (15 1/2 oz.) can salmon
1/3 c. mayonnaise
2 tbsp. minced onion
2 tbsp. chopped pimento, drained
2 tsp. lemon juice
Dash of pepper
3/4 c. Cheddar cheese, shredded
8 slices English muffins

Drain salmon. Break into chunks. Add mayonnaise, onion, pimento, lemon juice and pepper. Toss to mix. Fold in 1/2 cup cheese. Spread about 1/4 cup mixture on each slice of bread. Sprinkle remaining cheese over salmon mixture. Broil about 6 inches from heat for 3 to 4 minutes or until cheese melts and tops are golden.
