GRITS CASSEROLE 
6 c. boiling water
2 tsp. salt
1 1/2 c. uncooked regular grits
3 eggs, beaten
3/4 c. melted butter
2 c. shredded cheddar cheese
dash of hot sauce
1 tbsp. seasoned salt
1/8 tsp. paprika

Combine water and salt; bring to a boil. Stir in grits, cover and cook over low heat 20-30 minutes or until done. Combine remaining ingredients. Add a small amount of hot grits to egg mixture, stirring well. Then stir egg mixture into remaining grits. Spoon mixture into well-greased 3-quart casserole. Bake at 250 degrees for 1 hour.

A friend of mine from Alabama used to bring this to our annual church Christmas brunch in Illinois, and it is delicious!
