HALE 'N HEARTY BEEF CASSEROLE 
1 lb. ground chuck beef
1 tbsp. instant minced onion
1 can (10 3/4 oz.) condensed tomato soup
1 1/2 c. cooked, diced and mixed vegetables
1/2 c. dry precooked rice
1/2 tsp. salt
1/4 tsp. basil
1/8 tsp. pepper
1/2 c. shredded Cheddar cheese
4 to 5 green pepper rings

Break meat into small chunks in 2 quart casserole. Add remaining ingredients and blend well, cover. Cook in microwave oven 12 to 14 minutes.

Remove cover, sprinkle cheese over surface, and cook, uncovered 1 to 2 minutes or until cheese melts. Garnish with green pepper rings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
