CARROT CAKE | |
2 c. sugar 2 c. flour 2 tsp. baking soda 1/2 tsp. salt 2 tsp. cinnamon 3 eggs 1 1/2 c. salad oil 1 tsp. vanilla 1 c. crushed pineapple, drained 1 c. walnuts, (pieces) 3 c. carrots, grated 1/2 box raisins Mix all dry ingredients in large bowl. Add eggs, oil, vanilla, carrots, pineapple, nuts and raisins. Mix well. Pour into 9 x 13 inch pan. Bake at 350 degrees 40 to 45 minutes. Frost with cream cheese frosting.
