TURKEY SANDWICH (HOT BROWN) 
SAUCE:

4 c. milk
1/4 lb. butter
1/4 c. flour
2 tsp. salt
3/4 c. grated cheddar cheese
16 slices bread, toasted
16 slices bacon, fried crisp & drained
Parmesan cheese

Prepare cheese sauce by heating milk. In another saucepan, melt butter. Add flour and cook for 3 minutes. Add hot milk and whisk until smooth. Add grated cheese and whisk until melted and smooth. Place on oven proof plates, 2 pieces of toast, cover with 2 slices of turkey. Cover with cheese sauce. Sprinkle with Parmesan cheese. Broil until cheese sauce bubbles. Add bacon strips and serve. Yield: 4.
