JAM DANDY COFFEE CAKE 
CAKE:

1 1/2 cups all-purpose flour
1/4 cup sugar
2 1/2 tsp. baking powder
1/4 cup shortening (Crisco)
3/4 cup milk
1 egg

TOPPING:

1/4 cup brown sugar, packed
1/4 cup chopped nuts
2/3 cup jam

Preheat oven to 375°F. Pop cake ingredients into a bowl at once. Beat 50 quick strokes with a fork. Pour into a greased 9-inch square pan. Sprinkle top with brown sugar and nuts. Then dot with jam (cherry is great).

Bake at 375°F for 25 to 30 minutes (test with a wooden pick). Serve it warm to as many as 9.
