CHEESY POTATO SKINS | |
6 lg. baking potatoes 1/4 c. flour 1/2 lb. Velveeta 6 tbsp. butter 3 tbsp. chopped red & green pepper 3 chopped scallions 1/2 lb. fried bacon or ham Sour cream Bake potatoes in 400 degree oven until done. Cut potatoes in half and scoop out leaving a 1/4" shell. Cut halves crosswise. Coat each with flour. Shake to remove excess. Fry at 375 degrees for 2 to 3 minutes or until golden. Place on greased cookie sheet. Top with 1/2 tablespoon butter on each and divide cheese evenly on potatoes. Broil until cheese melts. Top each with chopped pepper, onion and bacon. Last add sour cream on each. Can be a main side dish. |
