LENTIL SOUP 
1 c. lentils
1/2 c. olive oil
1/2 c. onions
2 c. cubed raw potatoes
5 c. cold water
Salt and pepper to taste
1/2 c. fresh parsley

Wash lentils and put in the water. Add onions, olive oil; cook until half done. Add cubed potatoes, salt and pepper. Cook slowly until potatoes are done. You may need to add more water. Keep the ingredients covered with water.

When finished, serve in soup bowl and add a bit of parsley. Serve with warm pita bread. Very good on a cold day.
