CARROT CASSEROLE 
3 tbsp. butter
1 onion, sliced
1 can cream of celery soup
1/2 c. grated Cheddar cheese
4 c. sliced carrots
1/2 tsp. salt
Bread crumbs

Melt butter in skillet. Brown onions lightly. Add undiluted soup, cheese, carrots and salt. Mix well, pour mix in greased casserole. Top with bread crumbs. Bake at 350 degrees for 20 to 25 minutes or until crumbs brown lightly.

I just made this casserole for the pot luck. I haven't tasted it but it looks great. I used herb seasoned stuffing for the topping instead of the croutons. Enjoy.
