CHICKEN MUSHROOM FETTUCCINE 
1 tsp. olive oil
1/2 c. onion, chopped
1 lb. boneless skinless chicken breast, sliced
2 c. tomato, chopped
1/4 c. Parmesan cheese
1 1/2 c. mushrooms, sliced
1 clove garlic, minced
1/2 tsp. dried basil
4 c. fettuccine, cooked

Sauté mushrooms, onion and garlic in oil. Stir in chicken, salt, pepper and basil. Sauté until chicken is fully cooked. Add tomatoes and heat through. Serve over pasta. Garnish with Parmesan cheese.
