AUTUMN VEGETABLE SAUTE' 
1 tbsp. butter flavor Crisco or butter
1 med. onion, thinly sliced
1 clove garlic, minced
1 lb. zucchini (4 sm.), cut into 2 1/2 by 1/2 inch strips
1 c. sliced fresh mushrooms
10 cherry tomatoes, cut in half
1/2 tsp. salt
1/8 tsp. pepper
1/4 tsp. dried oregano leaves

Melt butter flavored Crisco in large skillet. Add onions and garlic, cook and stir over medium heat until onions are tender. Add zucchini and mushrooms. Cook and stir occasionally 10 to 12 minutes. Add tomatoes, salt, oregano and pepper, cook for 2 to 3 minutes or until zucchini is tender. Sprinkle with Parmesan cheese before serving. Serves 4 to 6.
