CHOCOLATE MERINGUE PIE | |
4 egg whites 1/4 tsp. baking powder 1 c. sugar FILLING: 6 oz. semi-sweet chocolate 4 egg yolks 1 tsp. vanilla 2 egg whites, stiffly beaten 1 c. cream, whipped Shaved chocolate 1. Beat the egg whites until stiff, adding baking powder. Add sugar and continue beating until glossy. Spread into a 10" pie plate and bake in a 300 degree oven for 1 hour. 2. Place the chocolate into the top of double boiler. Put over hot water and melt the chocolate. Remove from heat. 3. Beat in the yolks and cool. 4. Fold in the egg whites and vanilla. 5. Fold in half the whipped cream and pour into the cooled meringue shell. Spread remaining cream over the top. 6. Sprinkle with shaved chocolate and chill for several hours. Serves 6. |
