CHOCOLATE MASHED POTATO CAKE 
2 tbsp. butter
1/2 c. shortening
1 lb. light brown sugar
4 eggs
2 c. flour
1/2 c. cocoa
1 1/2 tsp. baking soda
1/2 tsp. salt
1 c. mashed potatoes
1 c. milk
1 tsp. vanilla

Cream butter, shortening and sugar together. Add eggs. Sift dry ingredients together and mix mashed potatoes with 1 cup milk and vanilla. Add sifted ingredients and the mashed potato mixture to the creamed butter and sugar. Bake at 325 degrees for 40 minutes in a 9 x 13 inch pan.

If center isn't done, turn oven to 300 degrees and continue baking until cake tests done.

This cake is rich and moist and does not need to be frosted. Excellent for lunch boxes.
