STUFFED ZUCCHINI 
4 lg. zucchini, sliced in half lengthwise
1 lb. hamburger meat (or mix 1/2 lb. each hamburger and sausage)
1 sm. onion, diced
1 sleeve Ritz crackers, crumbled
1 sm. jar tomato sauce
Grated cheese

Boil sliced zucchini for 10 minutes. Saute meat and onion, drain off fat. Scoop out center of zucchini (leaving a boat) and mix into meat. Mix crumbled crackers and tomato sauce into meat mixture. Heap mixture into zucchini boats and sprinkle with grated cheese. Place on cookie sheet and bake at 350 degrees for 30 minutes.
