STRAWBERRY SHORTCAKE 
1 pt. strawberries, hulled, sliced
1 tbsp. orange juice
1/2 tsp. grated orange rind
4 tsp. sugar
1/2 c. yogurt cheese
1/2 tsp. vanilla
4 sponge cake dessert shells

Combine 1/2 strawberries, orange juice, rind, and 1 teaspoon sugar in blender or food processor. Whirl until smooth. Combine yogurt, cheese, remaining sugar and vanilla in small bowl. Spoon 1 tablespoon puree onto cake; top with 2 tablespoons cheese mixture; drizzle with 1 tablespoon puree. Top with one quarter sliced strawberries. Repeat with remaining cakes.
