CORNED BEEF SALAD | |
2 (3 oz.) pkg. lemon gelatin 2 c. boiling water 1 tsp. vinegar 1 tbsp. horseradish 2 c. mayonnaise or salad dressing 2 c. diced celery 1 green pepper, diced 2 tbsp. grated onion 1 (12 oz.) can corned beef, flaked into sm. chunks Dissolve gelatin in hot water. Add vinegar, horseradish and mayonnaise (I prefer Miracle Whip in this recipe). Beat well to blend. Cool until it starts to thicken. Fold in rest of ingredients. Pour into oiled mold or pretty bowl. This salad holds its shape and keeps well. Attractive when unmolded onto red leaf lettuce and garnished with pepper rings and/or olive slices. |
