UNCLE ROBERT'S FAVORITE
CHOCOLATE CREAM PIE
 
1 baked pie shell
1 1/2 c. sugar
1/2 tsp. salt
2 1/2 tsp. cornstarch
1 tbsp. flour
3 c. milk
3 sq. unsweetened chocolate (or 9 tbsp. cocoa)
3 egg yolks, slightly beaten
1 tbsp. butter
1 1/2 tsp. vanilla

Combine sugar, salt, cornstarch, flour (and cocoa if used) in saucepan. Add milk gradually. Stir until mixed. Stir in chocolate if used. Cook over medium heat, stirring constantly until mixture thickens. Boil 1 minute. Remove from heat. Stir a little of mixture into egg yolks. Blend into hot mixture. Return to heat. Bring to boil. Boil 1 minute longer and remove from heat. Stir in butter and vanilla. Cool. Pour into baked shell. Cover with whipped cream to serve if desired.
