CHEESY SCALLOPED CARROTS 
12 sliced pared carrots
1 minced sm. onion
1/4 c. butter
1/4 c. flour
1/4 tsp. dry mustard
1 tsp. salt
2 c. milk
1/8 tsp. pepper
1/4 tsp. celery salt
1/2 lb. sliced American Cheddar cheese
1/2 to 1 c. flavored bread crumbs

Cook carrots in boiling water until tender, drain. Cook onion in butter. Stir in flour, salt and mustard, then milk. Cook and stir. Add pepper and celery salt.

In casserole, arrange carrots, then cheese, repeat another layer, ending with carrots. Pour on sauce and top with crumbs. Bake at 350 degrees for 35-40 minutes.
