LEMON - PECAN BREAD 
3/4 c. soft butter
1 1/2 c. sugar
3 eggs
2 1/4 c. all-purpose flour
1/4 tsp. baking soda
1/4 tsp. salt
3/4 c. buttermilk
3/4 c. chopped pecans
1 tsp. grated lemon rind

Cream butter; add sugar. Add eggs one at a time. Combine flour, soda, and salt; add to creamed mixture alternately with buttermilk, beginning and ending with flour mixture. Stir in pecans and lemon rind.

Pour into greased 9 x 5 loaf pan. Bake at 350 degrees 1 hour and 15-20 minutes or until toothpick comes out clean. Cool in pan for 10 minutes. Remove.
